The grouper with okra and herbs, is a very typical recipe of Cretan
cuisine, one of the most characteristic regarding fish cooking.
Ingredients (for 4 persons): Dusky grouper - 2 kg Okra - 1 kg Tomato - 1 kg Onion - 300 gr Garlic - 20 gr Celery - 15 gr Parsley - 15 gr Lemon - 1 piec. Olive oil - 300 ml White wine - 150 ml Vinegar - 50 ml Oregano - 5 gr Sugar - 10 gr Salt & Pepper - to taste
Procedure:
We first clean the fish from the scales and
the inwards under running water and keep the fish on the side to dry.
Then we diced the tomato, onion, garlic and
we mix in an oven tray all the above ingredients with the okra. We add the
salt, pepper, sugar, oregano, olive oil, vinegar, wine, lemon (juice &zest)
toss them well & spread on the pan.
Put the fish on the top and pour some olive
oil, salt, oregano. Cover with aluminium paper and bake in preheated oven on
200c' for 30 minutes, uncover and bake for another 10-15 minutes.
